When you are craving dessert, these keto Boston cream pie bites are the perfect solution. Made with cream cheese and almond flour crust, they are so delicious!
What Is Boston Cream
Boston cream is a filling used in donuts. It’s also the main characteristic of Boston cream pie – which has the cream in between two layers of cake.
I discovered that Boston cream is usually made with egg yolks, cream, and sugar. Then, the Boston cream pie is topped with a chocolate ganache.
The combination of cake and cream filling topped with chocolate is what makes this an iconic dessert – and it’s what I set out to make low-carb.
Keto Boston Cream
There are three parts to my keto Boston cream pie bites: the crust layer, the cream filling, and the chocolate topping. When you use all low-carb ingredients, it is pretty easy to make a dessert that you can enjoy on the keto diet. There are 3.9g net carbs in 2 bites.
For the Boston cream layer, I combined cream cheese and sour cream. For the most nutrition and richest taste, use full-fat ingredients. Then, sweeten it with granular sweetener. This way, it will create the perfect creamy texture.
Even though the main ingredient is cream cheese, this won’t have the same texture as cheesecake. The sour cream and eggs make the bites softer and not nearly as thick.
For the topping, just melt some sugar-free dark chocolate chips with butter and heavy cream. It creates a sugar-free chocolate ganache and it is divine!
Easy Keto Pie Crust Recipe
I love this pie crust recipe! It comes out just like a traditional pie crust but it is gluten-free, high in fiber and high in protein. I used a combination of almond and coconut flour. When you use almond flour, do not use almond meal. Almond meal is made by grinding up almonds and almond skins, so it will make your pie crust grainy and gritty.
Sweeten the pie crust with a granular sugar substitute. It will create the ideal flaky texture that you love about pie crust.
Boston Cream Pie Bites
These keto Boston cream bites are the perfect party food! Cut them up into tiny bites and serve them on individual plates for your guests. If you are going to make them for a party, I suggest making them a day early and storing them in the refrigerator.
The cream will set better the longer you keep it in the refrigerator.
When you make these ahead of time, keep a lid or some kind of wrap on top of them to protect them from the cold air in the refrigerator. You don’t want them to dry out.
Boston Cream Pie Cookie Bites
These Boston cream pie cookies bites are not just party food – they also make a sweet and filling snack too. Since they are so high in protein (from the cream cheese, heavy cream, and almond flour) they make the perfect post-workout snack.
Make a batch and store them in your fridge. Then, you can munch on them whenever a sugar craving hits!
